A delightful cheesecake that combines creamy texture with warm pumpkin and spices, topped with crunchy pecan streusel.


Ingredients

  • 1 1⁄2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1⁄2 cups pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup chopped pecans
  • Store-bought or homemade caramel sauce for drizzling (optional)

Instructions

  1. Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of prepared pan. Bake for 10 minutes and set aside to cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract, then pour over the cooled crust.
  4. In another bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, and cloves. Spread evenly over the cheesecake layer.
  5. Mix flour and brown sugar in a bowl. Cut in cold butter until crumbly. Stir in pecans and sprinkle over the pumpkin layer.
  6. Bake for 50-60 minutes or until center is set and edges are lightly browned. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  7. Before serving, drizzle caramel sauce on top if desired.

Notes

For best flavor and texture, refrigerate overnight. Garnish with whipped cream or pecans if desired.
