A creamy and nutty cheesecake topped with luscious caramel and crunchy macadamia nuts, perfect for any occasion.

- 8 tbsp butter, melted
- 1 cup macadamia nuts, roughly chopped
- 24 oz cream cheese, room temperature
- 1 cup white chocolate, melted
- 2 eggs
- 1 egg yolk
- 1 cup caramel sauce
- 8 oz sour cream
- 2 cups graham cracker crumbs
- 1 cup brown sugar
- 1 tbsp high-quality vanilla extract
- 1 cup macadamia nuts (for topping)
- 4 tbsp melted white chocolate
- 1/2 cup sugar
Instructions
- In a bowl, mix melted butter with graham cracker crumbs until fully combined.
- Spray a 9-inch springform pan with nonstick baking spray and press the crust mixture into the bottom and up the sides.
- Place the crust in the fridge to firm up while you prepare the filling.
- Preheat the oven to 325°F (163°C).
- Melt the white chocolate using a double boiler or in short bursts in the microwave. Stir until smooth.
- In a large bowl, whip the cream cheese until fluffy. Add sour cream and melted white chocolate, mixing until smooth.
- Beat in the eggs, egg yolk, sugar, brown sugar, and vanilla extract until creamy and well combined.
- Pour the cream cheese filling into the prepared crust.
- Drizzle 1/2 cup of caramel sauce on top and gently swirl it with a knife.
- Sprinkle chopped macadamia nuts around the edges of the cheesecake.
- Set the springform pan on a cookie sheet and bake for 60-75 minutes, until the edges are set and the center is slightly jiggly.
- Let the cheesecake cool at room temperature for 1 hour.
- Chill in the fridge for at least 8 hours, or overnight, to set completely.
- After chilling, remove the cheesecake from the fridge, top with extra macadamia nuts, drizzle melted white chocolate, and finish with more caramel sauce.
- Slice and serve chilled, enjoying every creamy, nutty, and caramel-filled bite.
