- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 vanilla bean (or 2 tsp vanilla extract)
- 1 1/2 cups fresh strawberries (hulled & mashed)
- 1 tbsp lemon juice
Instructions
- In a bowl, whisk together heavy cream, milk, and sugar until the sugar is dissolved. Scrape the seeds from the vanilla bean into the mixture and stir well.
- Mash the strawberries with lemon juice and gently fold them into the ice cream base. Chill the mixture in the refrigerator for at least 120 minutes.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a thick and creamy consistency.
- Transfer the ice cream to a container, cover it, and freeze for 180-240 minutes. Once frozen, scoop it out and enjoy!
Notes
Use ripe, fresh strawberries for the best flavor. If you don’t have a vanilla bean, vanilla extract works just fine. Let the ice cream sit out for a few minutes before scooping to make it easier to serve.
