A delicious, creamy treat that captures the essence of summer with fresh strawberries blended into a rich vanilla base.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 vanilla bean (or 2 tsp vanilla extract)
  • 1 1/2 cups fresh strawberries (hulled & mashed)
  • 1 tbsp lemon juice

Instructions

  1. In a bowl, whisk together heavy cream, milk, and sugar until the sugar is dissolved. Scrape the seeds from the vanilla bean into the mixture and stir well.
  2. Mash the strawberries with lemon juice and gently fold them into the ice cream base. Chill the mixture in the refrigerator for at least 120 minutes.
  3. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a thick and creamy consistency.
  4. Transfer the ice cream to a container, cover it, and freeze for 180-240 minutes. Once frozen, scoop it out and enjoy!

Notes

Use ripe, fresh strawberries for the best flavor. If you don’t have a vanilla bean, vanilla extract works just fine. Let the ice cream sit out for a few minutes before scooping to make it easier to serve.
