Delightful bars combining fresh strawberries with a crunchy oat topping, perfect for breakfast or dessert.

- 1/2 cup unsalted butter (melted)
- 1 cup all-purpose flour
- 3/4 cup old-fashioned oats
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar (packed)
- 1/2 teaspoon salt
- 2 cups coarsely chopped fresh strawberries
- 1/3 cup granulated sugar
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
Instructions
- Preheat your oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and spray it with cooking spray.
- In a large microwave-safe bowl, melt the butter for about 1 minute.
- Add flour, oats, granulated sugar, brown sugar, and salt to melted butter and stir until sandy.
- Set aside 1 heaping cup of the mixture for the topping. Press the remaining mixture into the prepared pan to form a crust.
- In the same bowl, combine strawberries, granulated sugar, lemon juice, and cornstarch; toss to combine.
- Spread the strawberry mixture evenly over the crust.
- Sprinkle the reserved crumble topping over the strawberries.
- Bake for about 50 minutes, until edges are set and the topping is pale golden.
- Remove from the oven and cool on a wire rack for at least 1 hour before slicing.
- Slice and serve.
Notes
Can be served warm or at room temperature. Great with vanilla ice cream or whipped cream.
