Description
A delightful twist on the classic dessert, these rolls combine creamy cheesecake filling, fresh strawberries, and a crunchy shortcake layer, all wrapped in soft crepes.
Ingredients
Scale
- 1 package (8 oz) cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries, diced
- 2 tablespoons granulated sugar
- 1 1/2 cups crushed shortbread cookies or graham crackers
- 1/4 cup unsalted butter, melted
- 6 large crepes or thin cake layers (store-bought or homemade)
- Powdered sugar, for dusting
Instructions
- Prepare Cheesecake Filling: In a mixing bowl, beat the cream cheese, sugar, and vanilla until smooth.
- Whip Cream: In another bowl, whip the heavy cream until stiff peaks form. Then, gently fold the whipped cream into the cream cheese mixture.
- Macerate Strawberries: In a small bowl, mix the diced strawberries with sugar and let them sit for 10 minutes to release their juices.
- Make Shortcake Layer: Combine the crushed cookies with melted butter until they resemble wet sand.
- Assemble Rolls: Lay out a crepe or cake layer and spread a layer of cheesecake filling. Sprinkle some shortcake crumbs and add the strawberry filling on top. Roll tightly to form a sushi roll shape.
- Chill: Wrap each roll in plastic wrap and refrigerate for at least 1 hour to set.
- Serve: Slice the rolls into 1-inch pieces, dust with powdered sugar, and enjoy!
Notes
Use fresh strawberries for the best flavor. Adjust the sugar to taste for a sweeter cheesecake filling.
