- 1 cup fresh or frozen strawberries
- 1/2 cup heavy whipping cream
- 1 block (8 ounces) cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla bean paste (or vanilla extract)
Instructions
- Pulse the strawberries in a blender or food processor until almost pureed, leaving some small chunks for texture. Set aside.
- In a medium bowl, whip the heavy cream using an electric mixer until stiff peaks form. Set aside.
- In another medium bowl, beat the softened cream cheese, powdered sugar, and vanilla until light and fluffy.
- Gently stir the pureed strawberries into the cream cheese mixture. Carefully fold in the whipped cream until well combined.
- Spoon the mousse into bowls and refrigerate for at least 20 minutes or until set. Enjoy!
