Strawberry Cheesecake Bars

Description

Delicious and refreshing dessert combining creamy cheesecake with sweet strawberries, perfect for any occasion.


Ingredients

  • 6 oz (170 g) digestive biscuits or graham crackers
  • 1 tbsp brown sugar
  • 1/3 cup (85 g) unsalted butter, melted
  • 2 blocks (500 g) cream cheese, room temperature
  • 1 tbsp all-purpose flour
  • Pinch of salt
  • 1/2 cup (105 g) caster sugar
  • 1/2 cup (100 g) sour cream or Greek yogurt, room temperature
  • 3 tbsp heavy cream, room temperature
  • 2 tsp vanilla extract
  • 2 large eggs, lightly whisked
  • 25 oz (700 g) strawberries, washed and dried
  • 2 tbsp lemon juice
  • 1/2 cup (105 g) brown sugar
  • 1 tbsp cornstarch mixed with a little cold water

Instructions

  1. Preheat the oven to 140°C (285°F). Spray a 20 x 20 cm (8 x 8-inch) cake tin with oil spray and line it with baking paper.
  2. In a food processor, blend the biscuits and brown sugar until fine. Mix in the melted butter, press the mixture into the prepared tin, and bake for 8 minutes. Allow it to cool.
  3. In a bowl, beat the cream cheese until smooth. Add flour, salt, sugar, sour cream, heavy cream, and vanilla; mix well. Add the eggs and mix until smooth. Pour the mixture over the cooled crust and bake for 30 minutes until set around the edges but jiggly in the center. Cool completely.
  4. Cut the strawberries and cook 18 ounces with lemon juice and brown sugar until soft. Add the cornstarch slurry; stir until thickened. Mix in the remaining strawberries. Pour the mixture over the cooled cheesecake.
  5. Cover and refrigerate for at least 5 hours. Slice into bars and serve chilled.

Notes

For a chocolate twist, add cocoa powder to the cheesecake mixture or drizzle melted chocolate over the topping before serving.
