Description

Delicious strawberry brownies that blend rich chocolate flavor with sweet strawberries, perfect for family gatherings or a cozy night in.


Ingredients

  • 16 oz fresh or frozen strawberries
  • 3/4 cup unsalted butter
  • 1 cup chopped white chocolate
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 2 large egg yolks
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • For the Ganache: 2 tbsp strawberry puree
  • 1 tbsp heavy cream
  • 3/4 cup chopped white chocolate

Instructions

  1. Make Strawberry Puree: Chop the strawberries and blend them until smooth. Simmer the puree on medium heat for about 20 minutes until it reduces to 2/3 cup. Let it cool.
  2. Brownie Batter: Preheat the oven to 350°F (175°C). Grease and line an 8×8” square pan with parchment paper. Melt the butter and white chocolate together. Mix in the sugar and strawberry puree. Add the egg and yolks, then fold in the flour and salt.
  3. Bake: Pour the batter into the prepared pan, smooth the top, and bake for 40 minutes or until a toothpick comes out clean. Let it cool completely.
  4. Strawberry Ganache: Heat the strawberry puree and cream together, then pour it over the chopped white chocolate. Stir until smooth, adding more cream if needed. Spread the ganache over the cooled brownies.
  5. Slice & Serve: Allow the ganache to set, then cut into squares and enjoy!

Notes

Use fresh strawberries for a bolder flavor. Be careful not to overmix the batter after adding the flour for chewy brownies.
