S’mores Cheesecake

Description

A delightful twist on the classic campfire treat, combining chocolate, marshmallows, and graham crackers into a smooth cheesecake.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 32 ounces cream cheese, room temperature
  • 1 cup granulated sugar
  • 2/3 cup sour cream, room temperature
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 4 large eggs, room temperature
  • 1 cup miniature marshmallows
  • 1/2 cup miniature chocolate chips
  • 1 cup chocolate chips or chopped milk chocolate
  • 3/4 cup heavy cream
  • Additional jumbo marshmallows, for toasting

Instructions

  1. Preheat your oven to 350°F (175°C). In a food processor, finely crush the graham crackers and mix with the melted butter. Press into a 9-inch springform pan and bake for 10 minutes.
  2. Reduce the oven temperature to 325°F (163°C). In a large bowl, beat the cream cheese and sugar until smooth. Add the sour cream, vanilla extract, and salt, then mix in the eggs one at a time. Fold in marshmallows and chocolate chips.
  3. Wrap the springform pan in foil and pour the cheesecake batter into the crust.
  4. Place the springform pan inside a larger baking dish and fill the dish with hot water halfway up the sides. Bake for about 70 minutes until edges are set. Let cool in the oven for 30 minutes and then on the counter for 1 hour. Refrigerate for at least 4 hours.
  5. For the ganache, heat chocolate chips and heavy cream together until smooth and pour over the cooled cheesecake.
  6. Toast the jumbo marshmallows on top, drizzle with ganache, and chill for another 30 minutes before serving.

Notes

Make sure the cream cheese is at room temperature for a smooth mix. Wrap the springform pan to avoid water getting in during baking.
