S’mores Cheesecake

Description

A delightful dessert that combines cheesecake with classic s’mores flavors.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 32 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 2/3 cup sour cream, room temperature
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 4 large eggs, room temperature
  • 1 cup miniature marshmallows
  • 1/2 cup miniature chocolate chips
  • 1 cup chocolate chips or chopped milk chocolate
  • 3/4 cup heavy cream
  • Additional jumbo marshmallows for toasting

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom and sides of a 9-inch springform pan. Bake for 10 minutes, then reduce the oven temperature to 325°F (163°C).
  2. In a large bowl, beat together the cream cheese and sugar until smooth. Add in the sour cream, vanilla extract, and salt. Mix until everything is combined. Gradually add the eggs and mix gently to keep the batter smooth. Fold in the miniature marshmallows and chocolate chips.
  3. Wrap the springform pan with aluminum foil or place it in a larger baking pan. Pour the cheesecake batter over the crust.
  4. Place the springform pan inside the larger pan filled with hot water, making sure it reaches halfway up the sides. Bake at 325°F for about 70 minutes, or until the edges are set but the center still jiggles slightly. Let it cool in the warm oven for 30 minutes, then at room temperature for 1 hour. Finally, refrigerate for at least 4 hours.
  5. After chilling, melt the chocolate and heavy cream together until smooth. Pour the ganache over the cheesecake and spread it to the edges.
  6. Top with jumbo marshmallows. Use a kitchen torch or broiler to lightly toast the marshmallows until golden. If you like, drizzle the remaining ganache over the top. Chill for 30 minutes before serving.

Notes

Serve chilled for best flavor, with optional chocolate ganache on the side.
