- 1/2 cup heavy cream (for caramel)
- 1/4 cup unsalted butter (for caramel)
- 1 teaspoon vanilla extract (for caramel)
- 1/2 teaspoon sea salt (for caramel)
- 4 ounces semi-sweet chocolate, chopped
- 1/2 cup heavy cream (for ganache)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt.
- In a separate bowl, whisk together buttermilk, vegetable oil, eggs, and hot coffee.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let the cake cool completely, then slice it in half horizontally to create two layers.
- For the peanut butter filling, beat peanut butter and softened butter until creamy. Gradually add powdered sugar and milk, beating until smooth.
- For the salted caramel sauce, melt granular sugar over medium heat, stirring constantly until deep amber. Slowly whisk in heavy cream and butter until smooth. Stir in vanilla and sea salt, then let cool slightly.
- For the chocolate ganache, heat heavy cream until simmering, then pour over chopped chocolate and let sit for 2-3 minutes. Gently whisk until smooth.
- To assemble, place one layer of cake on a serving plate, spread the peanut butter filling, then add the second cake layer. Pour salted caramel sauce on top, followed by the chocolate ganache drizzle.
Notes
Serve at room temperature for best flavor. Pair with vanilla ice cream for an extra treat.
