Ingredients

- 1 large head of cauliflower, cut into florets
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp red pepper flakes
- Salt and black pepper to taste
- 1/2 cup shredded mozzarella or cheddar cheese
- 1/4 cup chopped sun-dried tomatoes
- 1 tbsp lemon juice
- 2 tbsp chopped fresh parsley
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, red pepper flakes, salt, and black pepper until evenly coated.
- Spread the cauliflower on a baking sheet in a single layer and roast for about 25-30 minutes, or until tender and golden brown, stirring halfway through.
- Remove from the oven and sprinkle cheese and sun-dried tomatoes over the top.
- Return to the oven and roast for an additional 5 minutes until the cheese is melted.
- Drizzle with lemon juice and top with fresh parsley before serving.
Notes
Try adding different spices or herbs according to your taste. For extra crunch, roast for a few minutes longer.
