Description

A delightful and healthy dish that brings out the natural sweetness of cauliflower, perfect as a side or snack.


Ingredients

  • 1 large head of cauliflower, cut into florets
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/4 cup chopped sun-dried tomatoes
  • 1 tbsp lemon juice
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, red pepper flakes, salt, and black pepper until evenly coated.
  3. Spread the cauliflower on a baking sheet in a single layer and roast for about 25-30 minutes, or until tender and golden brown, stirring halfway through.
  4. Remove from the oven and sprinkle cheese and sun-dried tomatoes over the top.
  5. Return to the oven and roast for an additional 5 minutes until the cheese is melted.
  6. Drizzle with lemon juice and top with fresh parsley before serving.

Notes

Try adding different spices or herbs according to your taste. For extra crunch, roast for a few minutes longer.
