Ingredients

  • 1 can (20 oz) crushed pineapple, drained
  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1/4 cup lemon juice
  • 1 cup shredded coconut
  • 1/2 cup unsalted butter, melted
  • 1 package (8 oz) cream cheese, softened
  • Pineapple chunks for garnish
  • Additional shredded coconut for garnish

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar in a medium bowl.
  2. Press the mixture into the bottom of a 9×9-inch baking dish to form a firm layer.
  3. For the filling, beat the cream cheese in a bowl until smooth.
  4. Add the sweetened condensed milk and mix until well-blended.
  5. Stir in the lemon juice for a tangy flavor.
  6. Fold in the drained crushed pineapple and shredded coconut until combined.
  7. Spread the filling evenly over the crust.
  8. Top with extra shredded coconut.
  9. Chill in the refrigerator for at least 4 hours or until set.
  10. Cut into bars and garnish with pineapple chunks before serving.
