A delicious no-bake cheesecake that combines creamy cheesecake with tart fresh raspberries, perfect for any occasion.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups heavy cream
- 2 cups fresh raspberries
- 1/2 cup chocolate chips
Instructions
- Mix graham cracker crumbs and melted butter, then press the mixture into a baking dish to form the crust.
- In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Spread half of the cream cheese mixture over the crust, and layer some fresh raspberries on top.
- Add the remaining cream cheese mixture, then top with more raspberries and sprinkle with chocolate chips.
- Refrigerate the cheesecake for at least 4 hours. Serve chilled to enjoy!
Notes
Serve cold and could be garnished with extra raspberries or a drizzle of chocolate sauce.
