Description

A delicious no-bake cheesecake that combines creamy cheesecake with tart fresh raspberries, perfect for any occasion.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups heavy cream
  • 2 cups fresh raspberries
  • 1/2 cup chocolate chips

Instructions

  1. Mix graham cracker crumbs and melted butter, then press the mixture into a baking dish to form the crust.
  2. In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Spread half of the cream cheese mixture over the crust, and layer some fresh raspberries on top.
  5. Add the remaining cream cheese mixture, then top with more raspberries and sprinkle with chocolate chips.
  6. Refrigerate the cheesecake for at least 4 hours. Serve chilled to enjoy!

Notes

Serve cold and could be garnished with extra raspberries or a drizzle of chocolate sauce.
