- 1 box yellow cake mix
- 1 can (20 oz) crushed pineapple, drained
- 1/2 cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 1/2 cups powdered sugar
- 1 tsp vanilla extract
- Shredded coconut (optional)
- Pineapple slices (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, mix the cake mix, drained pineapple, vegetable oil, eggs, and vanilla extract until fully combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan on a wire rack.
- In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, 1 cup at a time, and beat until the frosting is fluffy and smooth.
- Stir in the vanilla extract.
- Once the cake has cooled completely, spread the cream cheese frosting evenly over the top of the cake.
- If desired, sprinkle with shredded coconut and garnish with pineapple slices for a tropical touch.
Notes
Make sure to drain the crushed pineapple well to avoid a soggy cake. Allow the cake to cool completely before spreading the frosting for a cleaner finish.
