Description

Pecan Pie Muffins combine the rich, nutty flavor of pecan pie with the convenience of muffins, perfect for breakfast, a snack, or dessert.


Ingredients

  • 1 cup packed light brown sugar
  • 1/2 cup all-purpose flour
  • 2 cups chopped pecans
  • 2/3 cup butter, softened
  • 2 eggs, beaten

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a medium bowl, mix the brown sugar, flour, and chopped pecans.
  3. In another bowl, beat the softened butter and beaten eggs together.
  4. Stir the dry ingredients into the wet mixture until just combined.
  5. Spoon the batter into the muffin cups, filling them 2/3 full.
  6. Bake for mini muffins for 12-13 minutes or regular muffins for 15-17 minutes until golden brown and set.
  7. Cool slightly before serving warm.

Notes

Make sure to soften your butter ahead of time for easier mixing. Do not overmix the batter for best results.
