- 1 cup packed light brown sugar
- 1/2 cup all-purpose flour
- 2 cups chopped pecans
- 2/3 cup butter, softened
- 2 eggs, beaten
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a medium bowl, mix the brown sugar, flour, and chopped pecans.
- In another bowl, beat the softened butter and beaten eggs together.
- Stir the dry ingredients into the wet mixture until just combined.
- Spoon the batter into the muffin cups, filling them 2/3 full.
- Bake for mini muffins for 12-13 minutes or regular muffins for 15-17 minutes until golden brown and set.
- Cool slightly before serving warm.
Notes
Make sure to soften your butter ahead of time for easier mixing. Do not overmix the batter for best results.
