Description

A delightful dessert that combines the sweet, juicy flavors of fresh peaches with a light, fluffy cake.


Ingredients

  • 1/4 cup salted butter, melted
  • 1/2 cup + 1 tbsp all-purpose flour
  • 1/4 cup light brown sugar, packed
  • 2 tsp raw sugar (optional)
  • 1/8 tsp salt
  • 1/8 tsp cinnamon
  • 3 medium peaches, sliced
  • 3 tbsp light brown sugar, packed
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1 and 1/4 cup + 1 and 1/2 tbsp cake flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/8 tsp cinnamon
  • 1/8 tsp nutmeg
  • Pinch ground cloves
  • 1/4 cup salted butter, softened
  • 3 tbsp vegetable oil
  • 3/4 cup + 2 tbsp granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/4 cup full-fat sour cream
  • 1/2 cup milk
  • 1/2 cup heavy cream, cold
  • 3 tbsp powdered sugar
  • 1 and 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and butter a 9-inch cake pan.
  2. In a medium bowl, toss sliced peaches with 3 tablespoons of brown sugar and 1/4 teaspoon of cinnamon. Arrange the peaches in the bottom of the prepared pan.
  3. Combine melted butter with crumble ingredients to make the crumble layer.
  4. In another bowl, mix the dry cake ingredients.
  5. In a large bowl, cream the softened butter and vegetable oil together, then gradually add the granulated sugar.
  6. Mix in the egg, sour cream, and vanilla until well combined.
  7. Alternately mix in the dry ingredients and milk, being careful not to overmix.
  8. Pour the cake batter over the peaches and sprinkle crumble on top.
  9. Bake for 42-49 minutes or until a toothpick inserted into the center comes out with moist crumbs.
  10. Let the cake cool before inverting it onto a serving plate.
  11. For whipped cream, mix cold heavy cream, powdered sugar, vanilla, and nutmeg until stiff peaks form.
  12. Serve the cake warm with a dollop of whipped cream.

Notes

Choose ripe, sweet peaches for the best flavor. If you don’t have fresh peaches, you can use canned peaches, just be sure to drain them well.
