- 4 medium russet potatoes, scrubbed and thinly sliced or cut into wedges
- 1 large yellow onion, thinly sliced
- 2 tbsp olive oil or avocado oil
- 1 tsp garlic powder
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the sliced potatoes and onions.
- Drizzle with olive oil and sprinkle with garlic powder.
- Toss until the potatoes and onions are well coated.
- Spread the mixture evenly on a baking sheet.
- Bake for 30-35 minutes, flipping halfway through, until the potatoes are crispy and golden brown.
- Serve hot.
Notes
For extra crunch, soak the sliced potatoes in water for 30 minutes before cooking and make sure to slice them evenly.
