Ingredients

  • 4 medium russet potatoes, scrubbed and thinly sliced or cut into wedges
  • 1 large yellow onion, thinly sliced
  • 2 tbsp olive oil or avocado oil
  • 1 tsp garlic powder

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the sliced potatoes and onions.
  3. Drizzle with olive oil and sprinkle with garlic powder.
  4. Toss until the potatoes and onions are well coated.
  5. Spread the mixture evenly on a baking sheet.
  6. Bake for 30-35 minutes, flipping halfway through, until the potatoes are crispy and golden brown.
  7. Serve hot.

Notes

For extra crunch, soak the sliced potatoes in water for 30 minutes before cooking and make sure to slice them evenly.
