Description

These delicious bars combine a creamy cheesecake filling with crunchy bits of Oreo cookies on top of a chocolate Oreo crust, making them a perfect treat for any occasion.


Ingredients

  • 2 cups crushed Oreo cookies (about 24 cookies)
  • 4 tablespoons unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chopped Oreo cookies
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine the crushed Oreos and melted butter, then press into the bottom of the prepared pan to create the crust.
  3. In a large bowl, beat the softened cream cheese and sugar until smooth and creamy, about 2-3 minutes.
  4. Add the vanilla extract and eggs one at a time, mixing on low speed until just combined.
  5. Gently fold in the chopped Oreo cookies.
  6. Pour the cheesecake filling over the crust and spread it evenly.
  7. Bake for 30-35 minutes until the center is set and edges are lightly golden.
  8. Let the cheesecake bars cool at room temperature, then refrigerate for at least 4 hours or overnight.
  9. Make the ganache by heating the heavy cream until it simmers, then pour over chocolate chips and whisk until smooth.
  10. Drizzle ganache over chilled bars and garnish with additional crushed Oreos.
  11. Use parchment paper to lift the bars from the pan and cut into squares before serving.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Freeze for up to 2 months, wrapped well in plastic wrap and foil.
