Description
These delicious bars combine a creamy cheesecake filling with crunchy bits of Oreo cookies on top of a chocolate Oreo crust, making them a perfect treat for any occasion.

- 2 cups crushed Oreo cookies (about 24 cookies)
- 4 tablespoons unsalted butter, melted
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup chopped Oreo cookies
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, combine the crushed Oreos and melted butter, then press into the bottom of the prepared pan to create the crust.
- In a large bowl, beat the softened cream cheese and sugar until smooth and creamy, about 2-3 minutes.
- Add the vanilla extract and eggs one at a time, mixing on low speed until just combined.
- Gently fold in the chopped Oreo cookies.
- Pour the cheesecake filling over the crust and spread it evenly.
- Bake for 30-35 minutes until the center is set and edges are lightly golden.
- Let the cheesecake bars cool at room temperature, then refrigerate for at least 4 hours or overnight.
- Make the ganache by heating the heavy cream until it simmers, then pour over chocolate chips and whisk until smooth.
- Drizzle ganache over chilled bars and garnish with additional crushed Oreos.
- Use parchment paper to lift the bars from the pan and cut into squares before serving.
Notes
Store in an airtight container in the refrigerator for up to 5 days. Freeze for up to 2 months, wrapped well in plastic wrap and foil.
