- 3/4 cup uncooked white rice
- 2 cups water
- 2 cups whole milk
- 1/2 cup sugar
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp ground cinnamon (plus more for topping)
- 1 tbsp butter
- Optional: pinch of nutmeg, caramelized sugar topping
Instructions
- In a saucepan, bring water to a boil. Add rice, cover, and simmer for 15–18 minutes until tender.
- Stir in milk and sugar. Cook over medium heat, stirring frequently, until thick and creamy (about 15–20 minutes).
- In a separate bowl, whisk eggs. Slowly mix in a few spoonfuls of the hot rice mixture, then stir the eggs into the pot.
- Add vanilla, salt, cinnamon, and butter. Stir until fully combined.
- Spoon the pudding into ramekins. Sprinkle with more cinnamon or broil briefly for a caramelized top.
Notes
Store in an airtight container in the fridge for 3-4 days. Reheat in the microwave or stovetop.
