Ingredients

  • 3/4 cup uncooked white rice
  • 2 cups water
  • 2 cups whole milk
  • 1/2 cup sugar
  • 2 eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (plus more for topping)
  • 1 tbsp butter
  • Optional: pinch of nutmeg, caramelized sugar topping

Instructions

  1. In a saucepan, bring water to a boil. Add rice, cover, and simmer for 15–18 minutes until tender.
  2. Stir in milk and sugar. Cook over medium heat, stirring frequently, until thick and creamy (about 15–20 minutes).
  3. In a separate bowl, whisk eggs. Slowly mix in a few spoonfuls of the hot rice mixture, then stir the eggs into the pot.
  4. Add vanilla, salt, cinnamon, and butter. Stir until fully combined.
  5. Spoon the pudding into ramekins. Sprinkle with more cinnamon or broil briefly for a caramelized top.

Notes

Store in an airtight container in the fridge for 3-4 days. Reheat in the microwave or stovetop.
