Description

A classic dessert featuring creamy rice pudding, perfect for family dinners and quiet evenings.

Ingredients

Scale
  • 1/2 cup arborio or short-grain rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 egg yolks (optional for extra richness)
  • 2 tbsp brown sugar (for topping)
  • Fresh strawberries, halved

Instructions

  1. In a saucepan, bring milk, rice, sugar, and salt to a gentle simmer. Stir often for 35–45 minutes until thick and creamy.
  2. Stir in vanilla and yolks (if using), then remove from heat.
  3. Pour into ramekins and cool slightly.
  4. Sprinkle brown sugar on top and broil until bubbly and golden.
  5. Add a fresh strawberry and serve warm or chilled.

Notes

Stir often while cooking to prevent the rice from sticking. For added richness, consider using full-fat milk or half-and-half.
