Ingredients

- 8 oz (225g) pasta (penne, spaghetti, or any pasta you like)
- 2 tbsp olive oil (extra virgin)
- 4 cloves garlic, minced
- 1 pint (about 2 cups) cherry tomatoes, halved
- 3 cups fresh spinach
- 1/2 cup crumbled feta cheese
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes to the skillet and cook for 3-4 minutes, until they begin to soften.
- Stir in the fresh spinach and cook until wilted.
- Add the cooked pasta to the skillet and toss to combine all ingredients.
- Remove from heat and fold in the crumbled feta cheese.
Notes
Serve warm, garnished with additional feta or fresh herbs if desired. Store leftovers in an airtight container for 3-4 days.
