Ingredients

  • 8 oz (225g) pasta (penne, spaghetti, or any pasta you like)
  • 2 tbsp olive oil (extra virgin)
  • 4 cloves garlic, minced
  • 1 pint (about 2 cups) cherry tomatoes, halved
  • 3 cups fresh spinach
  • 1/2 cup crumbled feta cheese

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cherry tomatoes to the skillet and cook for 3-4 minutes, until they begin to soften.
  4. Stir in the fresh spinach and cook until wilted.
  5. Add the cooked pasta to the skillet and toss to combine all ingredients.
  6. Remove from heat and fold in the crumbled feta cheese.

Notes

Serve warm, garnished with additional feta or fresh herbs if desired. Store leftovers in an airtight container for 3-4 days.
