- 1 cup cooked brown or green lentils
- 1 small zucchini, chopped
- 1 small eggplant, cubed
- 1 red bell pepper, chopped
- 1 red onion, sliced
- 1 cup cherry tomatoes
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the zucchini, eggplant, bell pepper, onion, and cherry tomatoes in olive oil, salt, and pepper.
- Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender.
- In a bowl, combine the cooked lentils and roasted vegetables.
- Serve warm, garnished with fresh herbs or a drizzle of balsamic vinegar if desired.
Notes
For extra flavor, add garlic or red pepper flakes before roasting. Substitute seasonal vegetables if desired.
