Ingredients

  • 1 cup cooked brown or green lentils
  • 1 small zucchini, chopped
  • 1 small eggplant, cubed
  • 1 red bell pepper, chopped
  • 1 red onion, sliced
  • 1 cup cherry tomatoes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the zucchini, eggplant, bell pepper, onion, and cherry tomatoes in olive oil, salt, and pepper.
  3. Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender.
  4. In a bowl, combine the cooked lentils and roasted vegetables.
  5. Serve warm, garnished with fresh herbs or a drizzle of balsamic vinegar if desired.

Notes

For extra flavor, add garlic or red pepper flakes before roasting. Substitute seasonal vegetables if desired.
