- 1 3/4 cups (220g) all-purpose flour
- 1 1/2 cups (300g) granulated sugar
- 3/4 cup (75g) unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup (240ml) whole milk
- 1/2 cup (120ml) vegetable oil
- 2 tsp vanilla extract
- 1 cup (240ml) boiling water
- 1 cup (230g) unsalted butter, softened
- 3 1/2 cups (450g) powdered sugar
- 1/2 cup (50g) unsweetened cocoa powder
- 1/3 cup (80ml) heavy cream
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth.
- Gradually stir in the boiling water until combined.
- Divide the batter between the prepared pans. Bake for 30–35 minutes, until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Beat the softened butter with an electric mixer until light and fluffy.
- Gradually mix in cocoa powder and powdered sugar, then add heavy cream and vanilla extract. Beat until creamy.
- Place one cooled cake layer on a serving plate, spread frosting on top, and then place the second layer on top.
- Frost the top and sides generously. Decorate as desired.
Notes
Store the cake tightly covered at room temperature for up to 3 days, or refrigerate for up to a week. Can be frozen for up to 3 months.
