Description

Ingredients

  • 1 3/4 cups (220g) all-purpose flour
  • 1 1/2 cups (300g) granulated sugar
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water
  • 1 cup (230g) unsalted butter, softened
  • 3 1/2 cups (450g) powdered sugar
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/3 cup (80ml) heavy cream
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth.
  4. Gradually stir in the boiling water until combined.
  5. Divide the batter between the prepared pans. Bake for 30–35 minutes, until a toothpick comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. Beat the softened butter with an electric mixer until light and fluffy.
  8. Gradually mix in cocoa powder and powdered sugar, then add heavy cream and vanilla extract. Beat until creamy.
  9. Place one cooled cake layer on a serving plate, spread frosting on top, and then place the second layer on top.
  10. Frost the top and sides generously. Decorate as desired.

Notes

Store the cake tightly covered at room temperature for up to 3 days, or refrigerate for up to a week. Can be frozen for up to 3 months.
