Delightful Mango Crumb Bars featuring ripe mangoes and a buttery crumb topping, perfect for dessert or a sweet snack.
Ingredients

- 2 1/2 cups ripe mangoes, cut into small chunks
- 3–5 tbsp granulated sugar
- 1/2 tbsp corn starch
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup cold unsalted butter, cubed
- 2/3 cup brown sugar
- 1 large egg
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the mango chunks with sugar and corn starch. Set aside.
- In a large bowl, combine flour, baking powder, and salt. Cut in the cold unsalted butter until the mixture forms small crumbs.
- In a separate bowl, mix together brown sugar, egg, and vanilla extract. Add this mixture to the crumb mixture and mix until slightly crumbly.
- Press about 2/3 of the crumb mixture into the bottom of an 8’x8′ baking pan lined with parchment paper. Spread the mango mixture over this layer, then sprinkle the remaining crumbs on top.
- Bake in the oven for 35-40 minutes or until the top is golden brown.
- Remove from the oven and let cool for 5-10 minutes. Lift the bars out using the parchment paper and allow to cool for another 15-20 minutes before cutting into 9 square bars.
Notes
Serve warm or at room temperature. Pairs well with vanilla ice cream or whipped cream.
