Description

Delightful Mango Crumb Bars featuring ripe mangoes and a buttery crumb topping, perfect for dessert or a sweet snack.


Ingredients

  • 2 1/2 cups ripe mangoes, cut into small chunks
  • 35 tbsp granulated sugar
  • 1/2 tbsp corn starch
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup cold unsalted butter, cubed
  • 2/3 cup brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the mango chunks with sugar and corn starch. Set aside.
  3. In a large bowl, combine flour, baking powder, and salt. Cut in the cold unsalted butter until the mixture forms small crumbs.
  4. In a separate bowl, mix together brown sugar, egg, and vanilla extract. Add this mixture to the crumb mixture and mix until slightly crumbly.
  5. Press about 2/3 of the crumb mixture into the bottom of an 8’x8′ baking pan lined with parchment paper. Spread the mango mixture over this layer, then sprinkle the remaining crumbs on top.
  6. Bake in the oven for 35-40 minutes or until the top is golden brown.
  7. Remove from the oven and let cool for 5-10 minutes. Lift the bars out using the parchment paper and allow to cool for another 15-20 minutes before cutting into 9 square bars.

Notes

Serve warm or at room temperature. Pairs well with vanilla ice cream or whipped cream.
