A delightful dessert that combines the rich creaminess of cheesecake with the tropical flavor of mangos.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 pounds cream cheese, at room temperature
- 1 cup granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup mango puree
- Zest of 1 lime (optional)
- 1 cup mango puree (optional for glaze)
- 2 tablespoons water (optional for glaze)
- 1 tablespoon cornstarch (optional for glaze)
- 1–2 tablespoons granulated sugar (optional for glaze)
Instructions
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a medium bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until well combined and press it into the bottom of the springform pan. Bake for 10 minutes and let cool.
- In a large mixing bowl, beat the cream cheese and 1 cup granulated sugar until smooth. Add the eggs one at a time, beating well after each. Mix in the sour cream, heavy cream, and vanilla. Fold in the mango puree and lime zest, if using.
- Pour the filling over the cooled crust and bake on a baking sheet for 60-70 minutes until set but still slightly jiggly. Let cool in the oven for an hour.
- Let the cheesecake cool completely at room temperature and then refrigerate for at least 4 hours.
- For the optional glaze, combine 1 cup mango puree, 2 tablespoons water, 1 tablespoon cornstarch, and 1-2 tablespoons granulated sugar in a saucepan and cook until thickened. Cool slightly.
- Pour the mango glaze over the chilled cheesecake before serving.
Notes
Make sure your cream cheese is at room temperature for a smooth batter. If you want a stronger mango flavor, use fresh mango puree. Let the cheesecake cool slowly in the oven to prevent cracking.
