- 1/2 cup sour cream
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice (for glaze)
- 1 teaspoon lemon zest (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
- In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
- In another bowl, beat the softened butter until creamy. Add the eggs one at a time, then mix in sour cream, lemon juice, lemon zest, and vanilla extract.
- Gradually mix the dry ingredients into the wet ingredients until combined.
- Pour the batter into the loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Let the loaf cool for about 10 minutes in the pan, then transfer it to a wire rack.
- For the glaze, whisk together powdered sugar, lemon juice, and lemon zest.
- Once the loaf is cool, drizzle the glaze over the top.
Notes
Serve with tea or coffee, and enjoy either plain or topped with fresh fruit.
