  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)
  • 1 teaspoon lemon zest (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter until creamy. Add the eggs one at a time, then mix in sour cream, lemon juice, lemon zest, and vanilla extract.
  4. Gradually mix the dry ingredients into the wet ingredients until combined.
  5. Pour the batter into the loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Let the loaf cool for about 10 minutes in the pan, then transfer it to a wire rack.
  7. For the glaze, whisk together powdered sugar, lemon juice, and lemon zest.
  8. Once the loaf is cool, drizzle the glaze over the top.
