A refreshing no-bake dessert that layers creamy key lime mousse with coconut yogurt and crunchy graham cracker crumble.

- 2 sleeves graham crackers
- 2 tablespoons melted butter
- 1 tablespoon maple syrup
- Pinch of salt
- 1 large avocado
- Juice from 3 Key limes
- Zest from 1 Key lime
- 4 oz vanilla Greek yogurt
- Pinch of salt
- Maple syrup (optional, for added sweetness)
- 8 oz coconut-flavored yogurt
- 1/4 cup toasted coconut flakes
- Lime zest (for garnish)
Instructions
- Prepare the Graham Cracker Crumble: Pulse the graham crackers in a food processor until they form fine crumbs. Add the melted butter, maple syrup, and a pinch of salt, and pulse until the mixture is combined. Transfer the crumble to a bowl and set aside for assembly.
- Make the Key Lime Mousse: Clean the food processor bowl, then add the avocado, Key lime juice, Key lime zest, Greek yogurt, salt, and maple syrup (if you want extra sweetness). Pulse the ingredients until the mixture is smooth and creamy.
- Assemble the Parfaits: Line the bottom of each parfait dish with a layer of the graham cracker crumble. Lightly press the crumble to form the base. Add alternating layers of Key lime mousse and coconut-flavored yogurt on top of the crumble. Garnish with toasted coconut flakes, lime zest, and any remaining graham cracker crumble.
Notes
For best results, use ripe avocados and enjoy within the first couple of days after assembling.
