Ingredients

  • 2 ½ cups graham cracker crumbs
  • ½ cup butter, melted
  • 1 tablespoon sugar
  • 24 oz cream cheese, room temperature
  • ¾ cup sugar
  • ⅓ cup key lime juice
  • 1 tablespoon key lime or lime zest
  • 1 teaspoon vanilla extract
  • 1 ¼ cup heavy whipping cream, cold

Instructions

  1. Prepare the crust by combining graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  2. Beat cream cheese in a bowl until smooth, then add sugar, key lime juice, lime zest, and vanilla extract. Mix until smooth.
  3. Add the cold heavy whipping cream and mix on low speed. Beat on high until mixture thickens and forms stiff peaks.
  4. Spread the cheesecake filling into the prepared crust. Cover and refrigerate for 5-6 hours until firm.
  5. Slice and serve with whipped cream if desired.

Notes

For best flavor, use fresh key lime juice. Store in the refrigerator for up to 4-5 days.
