- 2 ½ cups graham cracker crumbs
- ½ cup butter, melted
- 1 tablespoon sugar
- 24 oz cream cheese, room temperature
- ¾ cup sugar
- ⅓ cup key lime juice
- 1 tablespoon key lime or lime zest
- 1 teaspoon vanilla extract
- 1 ¼ cup heavy whipping cream, cold
Instructions
- Prepare the crust by combining graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
- Beat cream cheese in a bowl until smooth, then add sugar, key lime juice, lime zest, and vanilla extract. Mix until smooth.
- Add the cold heavy whipping cream and mix on low speed. Beat on high until mixture thickens and forms stiff peaks.
- Spread the cheesecake filling into the prepared crust. Cover and refrigerate for 5-6 hours until firm.
- Slice and serve with whipped cream if desired.
Notes
For best flavor, use fresh key lime juice. Store in the refrigerator for up to 4-5 days.
