A creamy and rich cheesecake combining caramel and Baileys Irish Cream, perfect for special occasions or weeknight desserts.


Ingredients

  • 8 oz. chocolate graham crackers
  • 3 tbsp granulated sugar
  • 7 tbsp unsalted butter, melted
  • 4 (8 oz.) packages cream cheese, at room temperature
  • Pinch of salt
  • 1 1/4 cups granulated sugar
  • 3 tbsp Baileys Irish Cream
  • 1 tbsp pure vanilla extract
  • 1/2 cup sour cream
  • 4 large eggs, at room temperature
  • Caramel sauce (recipe linked)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a 10-inch springform pan with tin foil.
  2. For the crust, crush the chocolate graham crackers and mix with sugar and melted butter. Press the mixture into the pan and bake for 10 minutes.
  3. In a mixer, beat the cream cheese until smooth. Add the sugar, salt, Irish cream, vanilla, sour cream, and eggs, mixing carefully until well combined. Pour this mixture into the crust.
  4. Place the springform pan in a larger pan. Pour boiling water into the larger pan and bake for about 60 minutes.
  5. Let the cheesecake cool in the oven for 60 minutes. Then, chill it overnight in the refrigerator.
  6. Prepare the caramel sauce and let it cool.
  7. Pour the cooled caramel over the cheesecake and refrigerate to set.
  8. Finally, remove the foil and springform ring, and serve.

Notes

Ensure all ingredients are at room temperature for a smoother batter. Chill overnight for best flavor and texture.
