A creamy and rich cheesecake combining caramel and Baileys Irish Cream, perfect for special occasions or weeknight desserts.

- 8 oz. chocolate graham crackers
- 3 tbsp granulated sugar
- 7 tbsp unsalted butter, melted
- 4 (8 oz.) packages cream cheese, at room temperature
- Pinch of salt
- 1 1/4 cups granulated sugar
- 3 tbsp Baileys Irish Cream
- 1 tbsp pure vanilla extract
- 1/2 cup sour cream
- 4 large eggs, at room temperature
- Caramel sauce (recipe linked)
Instructions
- Preheat the oven to 375°F (190°C). Line a 10-inch springform pan with tin foil.
- For the crust, crush the chocolate graham crackers and mix with sugar and melted butter. Press the mixture into the pan and bake for 10 minutes.
- In a mixer, beat the cream cheese until smooth. Add the sugar, salt, Irish cream, vanilla, sour cream, and eggs, mixing carefully until well combined. Pour this mixture into the crust.
- Place the springform pan in a larger pan. Pour boiling water into the larger pan and bake for about 60 minutes.
- Let the cheesecake cool in the oven for 60 minutes. Then, chill it overnight in the refrigerator.
- Prepare the caramel sauce and let it cool.
- Pour the cooled caramel over the cheesecake and refrigerate to set.
- Finally, remove the foil and springform ring, and serve.
Notes
Ensure all ingredients are at room temperature for a smoother batter. Chill overnight for best flavor and texture.
