Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat together softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
- Gradually alternate adding the dry mixture and buttermilk to the butter mixture, mixing until just combined.
- Fill cupcake liners halfway with batter, add a spoonful of peach preserves, and then cover with more batter until three-quarters full.
- Bake for 18-20 minutes until a toothpick comes out clean. Cool on a wire rack.
- To prepare frosting, beat the cream cheese, powdered sugar, and milk until smooth.
- Frost cooled cupcakes, top with diced peaches, drizzle with honey, and sprinkle with sugar crystals. Enjoy!
