Ingredients

  • 1 cup raw pistachios (unsalted, shelled)
  • 1 cup Greek yogurt (plain, high-protein variety)
  • 1 scoop vanilla protein powder (whey or plant-based)
  • 1 cup unsweetened almond milk (or any milk of choice)
  • 2 tbsp honey (or maple syrup for vegan version)

Instructions

  1. Soak the pistachios in water for at least 4 hours or overnight, then drain and rinse.
  2. In a blender, combine the soaked pistachios, Greek yogurt, protein powder, almond milk, and honey. Blend until smooth.
  3. Taste the mixture and adjust sweetness if needed.
  4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  5. Transfer to a container and freeze for a few hours until firm. Serve and enjoy your high protein pistachio ice cream!

Notes
