Ingredients

- 1 cup raw pistachios (unsalted, shelled)
- 1 cup Greek yogurt (plain, high-protein variety)
- 1 scoop vanilla protein powder (whey or plant-based)
- 1 cup unsweetened almond milk (or any milk of choice)
- 2 tbsp honey (or maple syrup for vegan version)
Instructions
- Soak the pistachios in water for at least 4 hours or overnight, then drain and rinse.
- In a blender, combine the soaked pistachios, Greek yogurt, protein powder, almond milk, and honey. Blend until smooth.
- Taste the mixture and adjust sweetness if needed.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer to a container and freeze for a few hours until firm. Serve and enjoy your high protein pistachio ice cream!
Notes
For a vegan version, use plant-based protein powder, almond milk, and maple syrup instead of honey. Make sure to soak the pistachios well for a smoother texture.
