  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 cups heavy cream, whipped

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes. Stir in the hot coffee until the batter is thin.
  4. Pour the cake batter evenly into the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  6. For the cream cheese filling, beat the cream cheese, powdered sugar, and vanilla until smooth. Gently fold in the whipped cream.
  7. Spread the cream cheese filling between the cooled cake layers. Frost the top and sides of the cake with the remaining filling.
  8. Chill the cake in the refrigerator before serving. Slice, serve, and enjoy!
