- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 can (21 oz) cherry pie filling
- Chocolate shavings for garnish
- Whipped cream for topping
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
- Add eggs one at a time, mixing well after each addition. Stir in sour cream until fully incorporated.
- Pour half of the cream cheese mixture over the crust.
- Spoon half of the cherry pie filling over the cream cheese mixture.
- Pour the remaining cream cheese mixture on top, followed by the rest of the cherry pie filling.
- Bake for about 55-60 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours or overnight.
- Serve with whipped cream and chocolate shavings on top.
Notes
Make sure the cream cheese is softened for a smooth texture. Store in the refrigerator and it will last for about 5 days.
