Description

A delicious and refreshing pasta salad combining tender chicken, crispy bacon, and fresh vegetables in creamy ranch dressing.


Ingredients

  • 8 oz whole wheat or chickpea pasta (fusilli, rotini, or penne)
  • 2 cups cooked chicken breast, diced
  • 4 strips turkey bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup ranch dressing
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, diced chicken, crumbled bacon, cherry tomatoes, and cucumber.
  3. Add ranch dressing and mix until everything is coated.
  4. Season with salt and pepper to taste.
  5. If desired, add green onions for garnish.
  6. Serve chilled.
