- 6 cups fresh spinach
- 1 cup fresh pineapple, cubed
- 2 persimmons or oranges, sliced
- 1 cup dried cranberries
- 1 cup pecans, halved
Instructions
- Grill or sauté the chicken breasts until cooked through. Let cool and slice.
- In a large bowl, combine the fresh spinach, cubed pineapple, sliced persimmons or oranges, dried cranberries, and halved pecans.
