Ingredients

  • 6 cups fresh spinach
  • 1 cup fresh pineapple, cubed
  • 2 persimmons or oranges, sliced
  • 1 cup dried cranberries
  • 1 cup pecans, halved

Instructions

  1. Grill or sauté the chicken breasts until cooked through. Let cool and slice.
  2. In a large bowl, combine the fresh spinach, cubed pineapple, sliced persimmons or oranges, dried cranberries, and halved pecans.
