Ingredients

  • 4 garlic cloves, minced
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • Sweet potatoes, peeled and cubed
  • Asparagus, trimmed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, minced garlic, thyme, rosemary, salt, and pepper together.
  3. Toss the chicken in the herb mixture until it is well coated.
  4. Place the chicken in a baking dish.
  5. Arrange the sweet potatoes and asparagus around the chicken in the dish.
  6. Drizzle any remaining herb mixture over the vegetables.
  7. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
  8. Serve hot.

Notes

For enhanced flavor, marinate the chicken in the herb mixture for a few hours or overnight. You can add other vegetables for more variety.
