- 4 boneless, skinless chicken breasts or thighs
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp dried thyme (or 1 tbsp fresh)
- 1 tsp dried rosemary
- Salt and pepper to taste
- Sweet potatoes, peeled and cubed
- Asparagus, trimmed
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the olive oil, minced garlic, thyme, rosemary, salt, and pepper together.
- Toss the chicken in the herb mixture until it is well coated.
- Place the chicken in a baking dish.
- Arrange the sweet potatoes and asparagus around the chicken in the dish.
- Drizzle any remaining herb mixture over the vegetables.
- Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
- Serve hot.
Notes
For enhanced flavor, marinate the chicken in the herb mixture for a few hours or overnight. You can add other vegetables for more variety.
