Description

A delightful combination of brownies and cookies, these Fudgy Chewy Browkies are rich, chewy, and perfect for any occasion.


Ingredients

  • 95 g (3/4 cups) plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g (1 1/4 cups) dark chocolate, chopped
  • 56 g (1/4 cups) butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g (3/4 cups) caster sugar
  • 90 g (1/2 cups) demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g (1/2 cups) dark or milk chocolate chips

Instructions

  1. Preheat the oven to 160°C (320°F) with a fan or 170°C (338°F) for conventional heating. Line a baking tray with parchment paper.
  2. In a heatproof bowl, combine the chopped dark chocolate and butter. Place the bowl over a pan of simmering water, making sure the bottom doesn’t touch the water. Stir occasionally until melted and smooth.
  3. In a separate medium bowl, use an electric hand whisk on high speed to beat together the caster sugar, demerara sugar, and eggs until very light, thick, and fluffy.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, and salt to ensure there are no lumps.
  5. Gradually fold the melted chocolate and butter mixture into the whipped eggs and sugars. Stir gently to keep the airiness of the whipped eggs.
  6. Carefully fold the dry ingredients into the wet mixture using a spatula, mixing only until just combined.
  7. Scoop tablespoons of batter onto the prepared baking tray, leaving space between each to allow for spreading. Bake for 12-14 minutes, or until the brookies are set and crackly on top.
  8. Remove from the oven and sprinkle with sea salt if desired. Let them cool on the baking tray for about 10 minutes before moving to a cooling rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
