A fun and colorful dessert that combines Fruity Pebbles cereal with creamy cheesecake, perfect for hot days and special occasions.

- 4 cups Fruity Pebbles cereal, plus more for garnish
- 1/3 cup melted butter
- 1/4 teaspoon salt
- 16 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/2 cup sour cream
- 3/4 cup heavy whipping cream
Instructions
- Prepare the Crust: Place 4 cups of Fruity Pebbles in a food processor and blend until fine crumbs form. Measure 2 1/2 cups of the crushed cereal into a large bowl. Set the remaining crumbs aside. Add melted butter and salt to the cereal crumbs and mix until combined. Press into a pie pan and freeze for 15 minutes.
- Make the Cheesecake Filling: In a mixing bowl, combine cream cheese, vanilla, powdered sugar, and sour cream. Whip until smooth. Slowly add heavy whipping cream and remaining cereal crumbs, mixing until fully combined.
- Assemble the Cheesecake: Pour the cream cheese filling into the crust and smooth the top. Cover and refrigerate for at least 1 hour or until set.
- Garnish & Serve: Sprinkle additional Fruity Pebbles on top before serving. Slice and enjoy!
Notes
Keep leftovers in the fridge for up to 3-4 days, or freeze for longer storage. Thaw in the fridge before serving.
