Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 cup cherry pie filling
  • Fresh cherries for garnish
  • Whipped cream for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Blend in the sour cream and heavy cream until the mixture is smooth.
  6. Pour half of the cheesecake batter over the crust in the springform pan.
  7. Spoon half of the cherry pie filling over the cheesecake batter.
  8. Add the remaining cheesecake batter over the cherry pie filling, and then spoon the remaining cherry pie filling on top.
  9. Use a knife to create a swirl effect by gently dragging it through the layers.
  10. Bake in the preheated oven for 50-60 minutes, or until the center is almost set.
  11. Allow the cheesecake to cool completely in the pan on a wire rack before refrigerating for at least 4 hours or overnight.
  12. Before serving, garnish with fresh cherries and a dollop of whipped cream.

Notes

Make sure your cream cheese is softened for smoother mixing. Don’t overbeat the eggs; mix until just combined. Allow the cheesecake to cool before refrigerating for the best texture.
