Description

Delicious and fluffy cupcakes filled with dulce de leche and topped with a creamy frosting.


Ingredients

  • 1 3⁄4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1⁄2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, room temperature
  • 1 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1/3 cup full-fat sour cream (or Greek yogurt), room temperature
  • 1/4 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 2/3 cup whole milk, room temperature
  • 1/4 cup dulce de leche (for filling)
  • 1 cup unsalted butter, room temperature (for frosting)
  • 2/3 cup dulce de leche (for frosting)
  • 2 1⁄2 cups confectioners’ sugar, sifted
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and brown sugar together until light and creamy.
  4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract, sour cream (or Greek yogurt), and vegetable oil.
  5. Gradually add the flour mixture and milk, alternating between the two until fully combined.
  6. Fill the cupcake liners 3⁄4 full and bake for 15 minutes, or until a toothpick comes out clean. Let them cool.
  7. For the frosting, beat the butter until creamy. Add the confectioners’ sugar gradually, then mix in the dulce de leche and salt.
  8. Create a hole in each cooled cupcake and fill it with dulce de leche.
  9. Frost the cupcakes and drizzle extra dulce de leche on top if desired.

Notes

Store in an airtight container for up to three days at room temperature or up to a week in the refrigerator.
