- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream (for chocolate layer)
- 24 oz cream cheese, softened
- 1 cup granulated sugar (for filling)
- 3 large eggs
- 1 cup heavy cream (for filling)
- 2 teaspoons vanilla extract
- 1 cup semi-sweet chocolate chips (for ganache)
- 1/2 cup heavy cream (for ganache)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes. Cool completely.
- Heat 1/2 cup of heavy cream until simmering. Pour over 1 cup of chocolate chips, let sit for 2 minutes, then stir until smooth. Spread over the cooled crust and chill for 30 minutes.
- In a large bowl, beat softened cream cheese and 1 cup sugar until smooth. Add eggs one at a time, then mix in 1 cup heavy cream and vanilla.
- Pour the cream cheese mixture over the chilled chocolate layer. Bake for 55-60 minutes until the center is set. Let cool to room temperature and refrigerate for at least 4 hours.
- For ganache, heat 1/2 cup heavy cream until simmering, pour over remaining 1 cup chocolate chips, let sit for 2 minutes, then stir until smooth. Pour over the chilled cheesecake.
- Chill the cheesecake for an additional 30 minutes before slicing and serving.

Ensure cream cheese is fully softened for a smooth fit. Allow enough time for chilling to meld flavors and improve texture.
