A fun and tasty dessert featuring a creamy filling, crunchy Oreo crust, and a pop of pink from fresh strawberries.

- 20 Oreo cookies, crushed
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1 cup strawberry puree
- 1 tbsp gelatin
- 1/4 cup water
- Pink food coloring
- Whipped cream for topping
Instructions
- Preheat the oven to 325°F (160°C) and line an 8-inch square pan with parchment paper.
- In a bowl, mix the crushed Oreos with the melted butter. Press this mixture into the bottom of the prepared pan.
- In another bowl, beat the softened cream cheese and sugar together until smooth.
- Add the eggs and vanilla extract to the cream cheese mixture, then fold in the heavy cream.
- Pour half of this cream cheese mixture over the Oreo crust and bake for 15 minutes.
- While that bakes, dissolve the gelatin in the water. In a separate bowl, mix this with the strawberry puree and a few drops of pink food coloring.
- Blend the remaining cream cheese mixture with the strawberry mixture until well combined.
- Once the first layer has baked, pour the strawberry cream cheese mixture over it. Chill in the refrigerator for at least 4 hours.
- After chilling, cut into squares. Top with whipped cream and extra Oreo crumbs if desired.
Notes
Make sure to soften the cream cheese before mixing. Chilling is essential for the squares to set properly.
