A delightful cake combining ice cream and cookie dough, perfect for chocolate lovers and any celebration.
Ingredients

- 2 cups chocolate sandwich cookie crumbs (like Oreo)
- 1/4 cup unsalted butter, melted
- 1/2 cup unsalted butter, room temperature
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup mini chocolate chips
- 1.5 quarts vanilla ice cream, softened
- 1.5 quarts chocolate chip cookie dough ice cream, softened
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
Instructions
- Grease a 9-inch springform pan.
- Combine the chocolate sandwich cookie crumbs and melted butter. Press this mixture into the bottom of the pan.
- Freeze the crust for 10 minutes.
- Cream together the room temperature butter and both sugars until light and fluffy.
- Mix in the milk and vanilla extract until well combined.
- Add the flour and mix until smooth. Fold in the mini chocolate chips.
- Spread half of the vanilla ice cream over the crust.
- Add half of the cookie dough mixture in chunks over the ice cream. Freeze for 1 hour.
- Spread the chocolate chip cookie dough ice cream over this layer, then add the remaining cookie dough mixture in chunks.
- Freeze for another hour.
- Spread the remaining vanilla ice cream over the top layer. Freeze for 4-6 hours, or overnight, until firm.
- To make the ganache, heat the heavy whipping cream in a small saucepan until it simmers.
- Remove from heat and pour it over the chocolate chips. Let it sit for 2 minutes, then stir until smooth.
- Remove the cake from the springform pan and pour the ganache over the top.
- Freeze for another 30 minutes before serving.
Notes
Make sure to soften the ice cream before using. Store leftovers tightly covered in the freezer for up to one month.
