A heavenly dessert combining rich chocolate cake and creamy strawberry ice cream, topped with luscious chocolate ganache.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1.5 quarts strawberry ice cream, softened
- 1 cup heavy cream
- 12 oz semi-sweet chocolate chips
- Fresh strawberries, sliced for garnish
- Chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, and vanilla extract to dry ingredients, mixing well. Stir in boiling water.
- Pour batter into the prepared pans and bake for 30-35 minutes, until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a wire rack.
- Once cakes are cool, place one layer on a serving plate and spread softened strawberry ice cream on top. Place the second cake layer on top and freeze for at least 2 hours.
- To make ganache, heat heavy cream until simmering, then pour over chocolate chips. Let sit for 5 minutes and stir until smooth.
- Pour ganache over the cake, letting it drip down the sides. Garnish with fresh strawberries and chocolate shavings, then freeze for another 30 minutes before serving.
Notes
Ensure cake layers are completely cool before adding ice cream to prevent melting. Store leftovers in the freezer.
