Description

A rich dessert combining chocolate, creamy cheesecake, and sweet caramel, perfect for special occasions.


Ingredients

  • 2 cups chocolate sandwich cookies, finely crushed
  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup caramel sauce, divided
  • 1/4 cup heavy cream
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and wrap a 9-inch springform pan with aluminum foil.
  2. Mix the crushed cookies and melted butter until well combined, then press into the bottom and up the sides of the pan. Bake for 10 minutes and set aside to cool.
  3. Beat the cream cheese and sugar in a bowl until smooth. Add 1/2 cup of caramel sauce, heavy cream, and vanilla extract, and mix well.
  4. Incorporate the eggs one at a time, mixing well after each addition, then pour over the cooled crust.
  5. Place the pan in a roasting pan filled with hot water and bake for 50-60 minutes or until the center is slightly jiggly.
  6. Cool in the oven for an hour, then refrigerate for at least 4 hours or overnight.
  7. For the ganache, heat 1/2 cup of heavy cream until simmering, pour over chocolate chips, let sit for 5 minutes, then whisk until smooth.
  8. Remove the cheesecake from the pan, drizzle with ganache and remaining caramel sauce, and decorate with chocolate chunks or cookie crumbs.

Notes

Store leftovers in the refrigerator covered tightly. Can freeze slices for longer storage.
