Ingredients

- 2 cups mushrooms (cremini, button, or portobello), sliced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 8 oz pasta (your choice)
- 1 cup heavy cream
- 1 cup grated cheese (mozzarella or parmesan)
- 1/2 cup garlic, minced
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Toss the sliced mushrooms with olive oil, salt, and pepper. Roast in the oven for about 20 minutes until tender.
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large bowl, combine the heavy cream, roasted mushrooms, garlic, and half of the cheese. Mix well.
- Add the cooked pasta to the mixture and stir to combine.
- Transfer the mixture to a baking dish and top with the remaining cheese.
- Bake for 25-30 minutes or until the top is golden and bubbly.
- Garnish with fresh parsley before serving.
Notes
Feel free to add other vegetables like spinach or bell peppers for extra flavor. Can be made ahead of time and stored in the fridge.
