Ingredients

  • 1 cup (130g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) light or dark brown sugar
  • 1/2 cup (100g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/8 cups (200g) white chocolate chips or chunks

Instructions

  1. In a large bowl, sift together flour, cocoa powder, baking soda, and salt. Set aside.
  2. Using a mixer with a paddle attachment, beat butter, brown sugar, and granulated sugar on medium speed for 3 minutes until fluffy. Scrape down the sides as needed.
  3. Beat in the egg and vanilla extract.
  4. Add the dry ingredients and mix on medium-low speed until just combined. Fold in the white chocolate chips. The dough will be thick and sticky.
  5. For thicker cookies, chill the dough in the refrigerator for 1 hour or overnight.
  6. Set oven to 350°F (180°C). Line two baking sheets with parchment paper.
  7. Scoop 2-tablespoon-sized balls of dough onto the baking sheet, spaced 3 inches apart. Bake for 9-10 minutes, until edges are just set.
  8. Let cookies cool on the pan for 10 minutes, then transfer to a wire rack to cool completely. Store in an airtight container for up to 4 days or freeze for up to 2 months.

Notes

Make sure butter is softened but not melted for the best texture. For a more intense chocolate flavor, consider using dark cocoa powder.
