- 1 cup (130g) all-purpose flour
- 1/2 cup (50g) unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (113g) unsalted butter, softened
- 1/2 cup (100g) light or dark brown sugar
- 1/2 cup (100g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/8 cups (200g) white chocolate chips or chunks
Instructions
- In a large bowl, sift together flour, cocoa powder, baking soda, and salt. Set aside.
- Using a mixer with a paddle attachment, beat butter, brown sugar, and granulated sugar on medium speed for 3 minutes until fluffy. Scrape down the sides as needed.
- Beat in the egg and vanilla extract.
- Add the dry ingredients and mix on medium-low speed until just combined. Fold in the white chocolate chips. The dough will be thick and sticky.
- For thicker cookies, chill the dough in the refrigerator for 1 hour or overnight.
- Set oven to 350°F (180°C). Line two baking sheets with parchment paper.
- Scoop 2-tablespoon-sized balls of dough onto the baking sheet, spaced 3 inches apart. Bake for 9-10 minutes, until edges are just set.
- Let cookies cool on the pan for 10 minutes, then transfer to a wire rack to cool completely. Store in an airtight container for up to 4 days or freeze for up to 2 months.
Notes
Make sure butter is softened but not melted for the best texture. For a more intense chocolate flavor, consider using dark cocoa powder.
