- 1 cup flour
- 1/2 cup cocoa powder
- 1 cup sugar
- 4 eggs
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup cherry preserves
- Fresh cherries for topping
- Chocolate curls for decoration
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper for easier removal.
- In one bowl, mix together the flour, cocoa powder, baking powder, and salt.
- In a separate bowl, beat the eggs and sugar together until light and fluffy.
- Fold the dry ingredients into the egg mixture gently until well combined.
- Spread the batter evenly onto the prepared baking sheet.
- Bake for 10-12 minutes or until the cake springs back when touched.
- Once baked, roll the warm cake in a clean kitchen towel and let it cool.
- While the cake cools, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
- Unroll the cooled cake, spread the cherry preserves over it, and then layer on the whipped cream.
- Carefully roll the cake back up and place it seam-side down.
- Top with fresh cherries and chocolate curls for decoration.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Make sure your eggs are at room temperature for better mixing. Handle the cake gently when rolling to avoid cracking.
