- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 4 cups fresh spinach
- 8 ounces cream cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 cup chicken broth
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute.
- Add chicken breasts to the skillet, season with Italian seasoning, salt, and pepper; cook until browned on both sides.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining olive oil and the fresh spinach; cook until wilted.
- Stir in cream cheese until melted and combined.
- Pour in chicken broth and mix well.
- Shred the cooked chicken and add it to the skillet.
- Transfer the mixture to a casserole dish, top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbling and golden.
- Serve hot.
Notes
For extra flavor, marinate the chicken in Italian dressing before cooking. You can use frozen spinach as an alternative.
