A creamy and delicious casserole combining tender chicken, healthy spinach, and rich cream cheese, perfect for family dinners.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 4 cups fresh spinach
  • 8 ounces cream cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute.
  3. Add chicken breasts to the skillet, season with Italian seasoning, salt, and pepper; cook until browned on both sides.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the remaining olive oil and the fresh spinach; cook until wilted.
  6. Stir in cream cheese until melted and combined.
  7. Pour in chicken broth and mix well.
  8. Shred the cooked chicken and add it to the skillet.
  9. Transfer the mixture to a casserole dish, top with mozzarella and Parmesan cheese.
  10. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbling and golden.
  11. Serve hot.

Notes

For extra flavor, marinate the chicken in Italian dressing before cooking. You can use frozen spinach as an alternative.
